Step 1
Preheat your oven to 450°F. Butter or spray a round cake pan or a sheet pan and set it aside.
Step 2
In a large mixing bowl, whisk together the flour, baking powder, salt, and baking soda until combined. Add the cold butter to the bowl and use a pastry cutter or your fingers to cut the butter into the dough until it resembles coarse crumbs.
Step 3
Pour one cup of buttermilk into the bowl with the flour and use a wooden spoon to mix the dough until all the flour is moistened and it starts to come together. If the dough is too dry to hold together, add up to 1/4 cup more buttermilk and mix until the dough is slightly sticky but not wet. Do not overmix the dough.
Step 4
Turn the dough out onto a lightly floured surface and pat it into a disc about 3/4-inch thick. Use a 3-inch biscuit cutter to cut out 6 biscuits. Reshape the scraps into another disc and cut out 2 more biscuits.
Step 5
Place the biscuits closely together in the cake pan or on a baking sheet and brush the tops with melted butter. Bake the biscuits for 12 to 15 minutes or until golden brown on top.
Step 6
Meanwhile, heat a medium nonstick skillet over medium-high heat. Add the sausage and cook until browned, using a wooden spoon to break it apart as it cooks. Once the sausage is browned, add the butter and cook until melted.
Step 7
Sprinkle the flour over the sausage and stir with a wooden spoon to create a paste. Continue to cook the flour with the sausage for another minute. Pour the milk into the pan and stir the gravy to combine everything.
Step 8
Season the gravy with onion powder, paprika, crushed red pepper, salt, and cracked black pepper, and continue to cook the gravy for 5 to 7 minutes, or until thickened, stirring often.
Step 9
Place two warm biscuits on a plate and slice them in half. Spoon sausage gravy over the biscuits and top with fresh chopped parsley if desired. Enjoy!
