Step 1

Peel ginger.  Slice into 1/8" thick rounds.

Step 2

Mix together water and sugar in a large saucepan.  Bring to boil.

Step 3

After sugar is dissolved, add the ginger rounds.  Boil for 45 minutes.  The ginger should be tender and sweet.

Step 4

Drain the ginger.

Step 5

Place the ginger on a drying rack for 30 minutes.

Step 6

Toss dried ginger with extra sugar to coat.

Step 7

Let sugar-tossed ginger on wax paper to dry.

Step 8

Store in an air-tight container.
