Make the matzo:

Preheat the oven to 450 F.

In the bowl of a stand mixer fitted with the dough hook, combine the flour, water and salt. On a medium setting, mix the dough until it forms into a ball.

Step 4

If using a pasta sheeter, run the dough through the #1 setting until thin. Using a rolling pin, roll the dough as thin as possible into a rectangle. You want the dough to be very thin and even throughout.

Step 5

Lay the rectangle of dough onto a baking sheet and cut into 4 to 8 rectangles.

Score the dough with a fork or docker.

Step 7

Bake at until brown, dry and crispy, about 20 to 30 minutes.

Spread the cream cheese onto the matzo and top with individual pieces of smoked salmon. Garnish the salmon with the dill sprigs. Finally, add the beet chrain, if using, and enjoy.
