Step 1
Rinse, peel, and slice whole carrots into 1/4-inch rounds. Or rinse and pat dry baby carrots.
Step 2
Arrange the carrots in a single layer on a microwave-safe dish with a lip around the edge. It's okay if they overlap a little. But they need space to cook evenly.
Step 3
If using brown sugar, sprinkle it over the carrots at this point.
Step 4
Carefully pour the water into the dish and cover it with a microwave-safe lid (or plate). If using plastic wrap, secure it around the edges, but leave a small vent for steam to escape.
Step 5
Microwave on high for 4 minutes, then carefully remove the dish. Flip carrot slices with kitchen tongs or a fork, or gently stir the baby carrots.
Step 6
Microwave for another 2-4 minutes or until tender.
Step 7
Remove the dish and discard the water.
Step 8
Transfer the carrots to a medium bowl. Add the olive oil (or butter) and the salt and toss gently to coat evenly.
Step 9
Let the carrots sit for a minute, then serve and enjoy!
