Step 1

Wash and cut lettuce leaves, leave them in a cup shape and set aside. Wash and peel the carrot, then dice into small pieces. Repeat with water chestnut. Cut the spring onion into small pieces.

Step 2

Mix soy sauce, vegetarian hoisin sauce and spicy chili bean sauce in a bowl, set aside.

Step 3

Heat 3 tablespoons of oil in a frying pan over medium high heat. Crumble in Impossible™ Beef and sauté for 5-7 minutes until brown. Add in sweet corn kernels, diced carrot and minced ginger, sauté for 3-4 minutes. Add in the sauce mixture and stir fry for 1-2 minutes. Remove from the heat and add in minced green onions, mix well.

Step 4

Place 2-3 tablespoons of filling into a lettuce cup and serve immediately. Makes 4-6 servings. Leftover filling could be used to make spring rolls or samosas.
