Step 1
Pour water into the bottom of a multi-functional pressure cooker (such as Instant Pot®). Place trivet into the pot and place potatoes into it. Close and lock the lid.
Step 2
Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
Step 3
Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Remove cooked potatoes using tongs. If using right away, then peel the skin by hand after allowing to cool, it will come off right away, or store without peeling in the refrigerator for later use.
