Step 1 Peel and cut the yuca root into 2 or 3 pieces if using fresh yuca. Refer to my video for the method on how to do it.

Step 2 Add the yuca to the Instant Pot and cover with water. Set to cook on Manual for 9 minutes on high pressure. Make sure the pressure valve is sealed.
Step 3
Step 3 While the yuca is cooking, thinly slice onions and mince garlic.
Step 4
Step 4 After the yuca is done cooking, carefully turn the pressure valve to venting and release the steam.
Step 5
Step 5 After the steam has released and it is safe to open the pot, drain the water and set the yuca aside in a bowl. Make sure to remove the fibrous inedible pieces from the core of the yuca.
Step 6
Step 6 Set the pot to sauté mode, add olive oil and the sliced onion and cook for about 10 minutes or until the onion is soft and translucent.
Step 7
Step 7 Add the garlic and cook for another minute. Then add the lemon juice or vinegar and salt to taste.
Step 8
Step 8 Mix the yuca into the mojo or pour the mojo over the yuca, serve and enjoy!
