Step 1
Preheat oven to 350 °F. Spray a silicone muffin pan with cooking spray.
Step 2
Add egg whites to muffin pan and sprinkle with salt and pepper. Bake for 25-30 minutes or until egg whites are cooked through. Let cool for 10 minutes.
Step 3
Meanwhile, cut English muffins in half if not halved already and spread laughing cow cheese on one side of muffin. Top each muffin with egg white patty, Canadian bacon, and the other half of the muffin.
Step 4
Wrap each sandwich individually in tinfoil, wax paper, or parchment paper and place them in a freezer safe resealable bag. Refrigerate for a week or freeze for up to 1 month.
Step 5
When ready to eat, heat up in microwave or stove (see below for how to reheat). Add the jam to the cheese side of the english muffin and enjoy!
