Step 1
Whisk eggs in a mixing basin until frothy, then whisk in milk, vanilla, and melted butter.Whisk in the sugar and flour. Whisk until smooth and nearly no lumps remain; little lumps are OK, but large ones should be avoided for a good thin joy of cooking french pancake.

Heat a nonstick french pancake pan measuring 10 inches (25cm) over medium-high heat.

Apply a little coating of coconut oil or avocado oil to a heated pan. You may use an oil spray or absorbent paper sprayed with oil to grease the pan. If you over-oil the pan, the joy of cooking french pancake will cook.

Pour approximately a third of a cup of batter into the pan while tilting it in a circular motion; for visual assistance, see the images in this article. This gradually coats the surface of the pan with batter. If the pan is sufficiently heated, the batter will adhere effectively to the coating. If it cracks in the pan, the temperature of the pan is too high.
Step 5
Cook for two to three minutes on one side, or until the sides are dry and you can turn the joy of cooking french pancake with a spatula.
Step 6
Flip the french crepe and cook for a further minute on the other side.
Step 7
Reserve on a dish until the remaining batter is cooked.
Step 8
Serve with chocolate spread, preserves, or confectioners' sugar.
