Preheat your oven to 350°F. Mist your mini loaf pan with the cooking spray.

Mash the banana with the potato masher (if you haven't done this already).

In a small bowl, mix the mashed banana, egg, water, and vanilla extract. Set this mixture aside.
Step 4
In another small bowl, stir the Kodiak mix and cinnamon together. Now add your wet ingredients to your dry mixture and stir gently. Getting overly vigorous with the stirring can lead to dense banana bread. Gently stir the chopped pecans into the banana bread batter as well.
Step 5
Fill two compartments of your prepared mini loaf pan with the banana bread mixture. (This recipe makes 2 mini loaves.)
Step 6
Bake your Kodiak Cakes banana bread for 25-27 minutes in the top third of your preheated oven. When finished baking, a toothpick inserted into the center of the bread should come out clean. (Some small crumbs attached to the toothpick are ok too.)
