In a small pot boil 2 1/2 cup water on medium flame.

Once it starts boiling, add lemongrass leaves, ginger, and mint leaves.

Cover the pot with a lid and continue to simmer for 5 minutes.

Strain the tea into cups using a fine tea strainer.

Add sweetener of your choice and some lime juice.

Pour water into the Instant Pot liner.
Step 7
Add lemongrass leaves, ginger, and mint leaves.

Lock the Instant Pot with the release valve in the sealing position.

Turn the Instant Pot on high-pressure mode for 5 minutes by selecting the pressure or the manual button on the high-pressure setting.
Step 10
Keep the "keep warm" setting on.
Step 11
Allow pressure to release naturally for 5 minutes and then release the remaining pressure by moving the pressure release valve in the venting position.
Step 12
Filter the lemongrass tea using a fine tea strainer into a teapot or cups.

Add sweetener of your choice and some lime juice.
