Lime-in-the-Coconut Almond Bark

(10 to 12 ounces) white baking chips

shortening

green food coloring, optional

coconut,

almonds,

lime

Wow!  This is the easiest recipe to make and it is delicious… I substituted coconut oil for the shortening and it was fabulous… Thank you for the recipe… Wonderful

I have now made this three times. The first time, I followed the recipe exactly as written. It was okay, but not quite what I wanted. The second time, I upped the lime zest to two tablespoons. Better, but still not quite there. The third time, I added three drops of Boyajian Lime oil (not a plug for the brand, just the only one I have ever used) and the two tablespoons of lime zest (we like lime). This came out with just the right amount of lime flavor. I am making these for Christmas goodie bags for our neighbors. Next version, I think I will add some dried tart cherries or dried cranberries. This is a great base recipe to work with and can be changed to different colors, flavors, and additions. In all versions, I used vegetable shortening.

I made this recipe two more times and the third time around, I used 4 tsp. grated lime zest, 1/2 cup toasted coconut and instead of the almonds, I'd used 1/2 cup dried cranberries.  I'd used 8 tsp. of vegetable shortening and that helped to make the candy mixture smoother and easier for me to spread.  So the 3rd time around I made LESS changes! I'd say that the 3rd time worked best!

A great summer treat with tropical flavors. But I prefer mine with vegetable oil instead of shortening. It serves the same purpose and it doesn't impart an odd flavor.

I made this for another treat to add to the holiday plates I give to my neighbors.  It was a big hit with everyone.  The lime was different for a bark candy.
