Step 1

Pre-heat oven to 180ºC (356ºF). Line a 6-inch cake tin with parchment paper and set aside.

Step 2

In a medium bowl, whisk the egg until it starts to get a little foamy. Add the 0 calorie brown sugar and pumpkin puree and whisk again until smooth and well combined. Add the flour and pumpkin spice mix and whisk until smooth.

Step 3

Grease the cake tin with a few 1-cal spraysTransfer the batter to the cake tin and bake for 15-18 minutes or until a toothpick inserted into the centre comes out clean.

Step 4

Allow the cake to cool on a baking rack and make the frosting by whisking together the yogurt, 0 calorie icing sugar and coffee until smooth.

Step 5

Frost the cooled cake, slice and enjoy!
