Step 1

Preheat the oven to 400 degrees. Line sliced roma tomatoes on a baking sheet lined with parchment paper, leaving some space between the tomatoes. Set aside.

Step 2

Mix oil, garlic, salt, pepper and onion powder in a small bowl. Brush the oil mixture on each tomato.

Step 3

Bake for 10 minutes. Remove the baking sheet from the oven and add the sliced mozzarella, then the sliced parmesan cheese evenly over the tomatoes. Place the baking sheet back in the oven and bake until the cheese is melted, about five minutes. Sprinkle fresh basil and parsley over the baked tomatoes.
