Step 1

Preheat oven to 375 degrees F.Place chicken breasts on a cutting board and using a sharp knife, slice in half lengthwise.

Step 3

Sprinkle both sides of chicken with dried basil, dried parsley and salt and pepper.

Step 5

Heat olive oil in a cast iron skillet over medium-high heat. Add chicken and cook for 3 minutes each side. Transfer chicken to a plate.

Step 7

Add chicken broth, garlic and the juice of 1 lemon to the hot skillet. Allow juices to simmer for 5 minutes, then turn off the heat.

Step 9

Add chicken back into the skillet. Add chopped tomatoes, onions and olives on top. Place in the preheated oven for 10 minutes.

Step 11

Remove from oven and add chopped fresh avocado, crumbled feta and fresh parsley. Serve warm.
