Make the dressing:

In a small bowl, combine the yogurt, water, adobo sauce, lime juice, salt and a few twists of black pepper, and thoroughly mix.

Season the chicken:

In a medium bowl, toss the chicken with the taco seasoning and pickled jalapeños.

Make the layers:

Dividing evenly, layer the ingredients in the jars in this order: dressing, corn, black beans, chicken-jalapeño mixture, cheese, tomatoes, avocado and romaine.
Step 7
Store in the refrigerator until ready to serve. Before serving, shake the jar to distribute the dressing and transfer to a salad bowl. Garnish with tortilla chips, if desired.
