Step 1
Brown mince in oil, add capsicums, stir until just tender.
Step 2
Add taco seasoning, tomatoes and corn. Cook for approximately 20 minutes.
Step 3
Transfer to a large casserole dish (or 4 individual dishes). Top with mashed potato.
Step 4
Sprinkle with cheese and microwave until heated through and cheese is melted.
