Step 1
To prepare this yummy dip recipe, take a large bowl and crack eggs in it. Then, using an electric beater, beat the eggs until creamy and fluffy. Keep aside till required.

Next, wash the mint and coriander leaves in running water and roughly chop them in another bowl. Now, in a blender jar, add the chopped leaves along with green chillies and peeled ginger. Blend all these ingredients to a fine paste. Add a little water for better consistency.
Step 3
Then, add the sugar and salt as per your taste and blend all the ingredients once again. Afterwards, add the creamy eggs very slowly to the blender jar and blend once again. Do not add the creamy mix at once, instead, do it in batches. Now, add the extra virgin olive oil, lemon juice along with white pepper powder in the blender, and give it a final blend.
Step 4
Transfer this blended mixture to a microwave-proof bowl and cook for about 5 minutes at 480 degree Celsius until it boils. Once done, let the mixture cool down at room temperature and transfer in an airtight container. Mint mayonnaise is ready, pair it with finger foods.
