Step 1
Preheat oven to 350 degrees F.Combine oats, and next 4 ingredients, through chia seeds in a large bowl. Stir well to combine.Add honey, and stir well to coat. Add coffee, ¼ cup at a time, stirring to coat, until granola is wet but not sopping. You may not need the full cup of coffee.Line a baking sheet with parchment paper. Spread granola evenly over paper. Bake for 30 minutes, stirring twice during baking.Remove from oven and generously season with sea salt to taste. Give a good stir and let cool. Store in an airtight container for up to 1 week.

I swapped it with maple syrup and although I haven't tasted it with honey to compare, I can truthfully say this was a HIT! Also chopped up a bar of dark chocolate in replace of the chips (partly a vegan swap, partly a Covid-19 pantry swap).... also DELICIOUS!
