Preheat oven to 200C. Heat the oil in a large frying pan over medium-high heat. Add onion and cook, stirring, for 5 minutes or until just golden. Add the lamb mince and cook, stirring with a wooden spoon to break up any lumps, for 5 minutes or until mince changes colour. Add the chermoula and cook, stirring, for 1 minute or until aromatic. Add the spinach and cook, stirring, for 2 minutes or until spinach just wilts. Remove from heat. Add the pine nuts and currants and stir to combine. Taste and season with salt and pepper.
Step 2
Place the bread on a baking tray. Top with mince mixture and sprinkle with feta. Bake in oven for 15 minutes or until heated through.
Step 3
Sprinkle the pide with parsley and cut into slices. Place on a serving platter and serve immediately with tzatziki.
