Step 1

Preheat the oven to 350 degrees F.

Step 2

Add the ground beef, the onion, and the bell pepper in a large skillet over medium heat and cook, while crumbling the meat, until the beef has browned and the veggies are tender, about 10-15 minutes.

Step 3

While cooking, season the beef mixture with 1 teaspoon of the salt and 1/2 teaspoon of the pepper.

Step 4

Fill a 5-quart Dutch oven or other oven-safe pot with lightly salted water and bring to a rapid boil. Add the egg noodles, and cook until they are tender yet firm to the bite, about 7-9 minutes.

Step 5

Drain the noodles and return to the pot.

Step 6

Add the diced tomatoes, the tomato soup, the cottage cheese, the sour cream, and the Worcestershire sauce to the egg noodles and stir to blend.

Step 7

Stir the noodle mixture into the ground beef mixture until it is evenly combined.

Step 8

Taste the casserole and adjust the salt and the pepper seasonings as needed.

Step 9

Sprinkle the cheddar cheese over the top of the casserole and bake, uncovered, until it is heated through and the cheese has melted and is golden, about 25-30 minutes.

Step 10

Serve immediately.
