Step 1

Boil whole oranges for 1 and a half hours, check the pot while boiling and top up water if it gets too low, drain and cool. (see note)

Step 2

Butter a non-stick spring form cake tin and dust with caster sugar.

Step 3

In a bowl beat eggs with sugar using a stick blender.

Step 4

Add the 2 whole oranges into the bowl of eggs and sugar. Press onto the oranges with your stick blender to break them up into the mixture. Blend until large pieces of orange disappear and mix is nearly smooth.

Step 5

Add almond meal, baking powder and ground cardamom, beat with stick blender until combined.

Step 6

Pour into tin, bake in a preheated 180 C oven for 50-60 minutes or until the top is golden brown.

Step 7

Cool in tin. Once cool remove and dust with icing sugar.
