Step 1

Preheat the oven to 350°F.

Step 2

Wash and chop two cups of red potatoes into wedges

Step 3

Place the potato wedges in a large mixing bowl.

Step 4

Add the olive oil and mix with the potatoes to coat them evenly.

Step 5

Add the cumin, garlic powder, onion powder, paprika, and salt + pepper to taste.

Step 6

Use clean hands to mix and coat the potatoes evenly in the spices.

Step 7

Spread the potatoes out in a single layer on a lined or greased baking sheet.

Step 8

Pop the potato wedges into the oven to bake for about 40 minutes, or until they are soft on the inside (you can bake them longer for a crispier exterior, just watch them closely so they don't burn).

Step 9

Garnish the potatoes with optional fresh chives and enjoy!
