Step 1
Slice the beef into thin strips. Then in a medium bowl, mix the beef with the marinade ingredients. Set aside for at least 30 minutes.
Step 2
To make the sauce, mix together the chicken stock, cornstarch, oyster sauce, rice wine vinegar, soy sauces, sugar, sesame oil, and white pepper. Set aside.
Step 3
Slice the peppers in onions in thin strips, all the same sizes to cook at the same speed.
Step 4
Heat your pan over high heat and add 2 tbsp of vegetable oil. Sear the beef on both sides, about 30 seconds per side. Remove and set aside. The beef should be about 80% cooked.
Step 5
Reduce the heat to medium-high. Add the remaining tablespoon of oil. Add onions and bell pepper and sauté for 3-4 minutes or until slightly softened but still has a bite. Add in grated garlic and giner and cook for another minute.
Step 6
Add the beef back into the pan and stir to combine. Add the sauce, stir and coat, and cook for another 3-4 minutes or until sauce is thickened. Taste for additional seasoning and serve over rice :)
