Step 1
In a large bowl, combine ground pork, pepperjack cheese, jalapeños, onion, garlic, smoked paprika, cumin, black pepper, salt, and red pepper flakes. Mix well until all ingredients are evenly distributed.
Step 2
If using casings, soak them in water according to the package instructions. Rinse well and set aside.
Step 3
If using casings, carefully stuff the sausage mixture into the casings using a sausage stuffer. Tie the ends of the casings and twist sausages into desired lengths.
Step 4
Heat a grill or skillet over medium heat. Cook sausages for about 6-8 minutes per side, or until they reach an internal temperature of 160°F (71°C) and are nicely browned.
Step 5
Let sausages rest for a few minutes before slicing. Serve with your favorite sides or on a bun.
