Step 1
Cover pork with water in a large saucepan. Bring to a boil and simmer for approximately 5 minutes.

Remove from heat and strain into a colander. Wash saucepan and oil well.
Step 3
Return pork to the pan and add the spices and sauces, ensuring that the meat is well covered. For best results use hands to combine.
Step 4
Pour the wine into the bottom of the saucepan, return to stove and cook over a low heat for 2-3 hours. Turn the pork occasionally and add a little water if necessary. Take care not to burn the sauce.
