Step 1

1 Combine the lentils, water, bell pepper, salsa, chili powder, oregano, smoked paprika and black pepper in a large pot over high heat

Step 2

2 Bring to a boil, then reduce the heat to medium-low, partially cover and cook until the lentils are barely tender, 10 to 15 minutes

Step 3

3 Stir in the corn; cook until heated through, 1 to 2 minutes

Step 4

4 Taste and add salt, as needed

5 (Depending on the salsa you used, you might not need salt

6 ) Stir in the lime juice and 1/4 cup chopped cilantro

Step 7

7 Divide among individual bowls and top with sliced avocado and cilantro

8 Serve hot, with lime wedges
