Place the potato in a saucepan. Cover with water. Season with salt. Bring to the boil. Boil for 20-25 mins or until tender. Drain. Return to the pan over low heat for 1 min. Remove from heat. Add the milk and 30g of the butter. Mash until smooth. Season.

Meanwhile, preheat oven to 220°C or 200°C fan forced. Heat the oil in a large deep frying pan over medium-high heat. Cook the onion, stirring, for 5 mins or until softened. Add one can of crushed tomatoes, one-and-a-half tablespoons of Worcestershire or barbeque sauce, the leftover lamb, pork, beef or chicken, vegetables, and a half-cup of water to the pan. Bring to the boil.
Step 3
Transfer the meat and vegetable mixture to a baking dish. Cover with mash and rough up with a fork, then dot with butter. Bake this in the oven for 15-20 minutes or until golden and bubbling hot. Serve with a green salad.
