Step 1
Preheat oven to 400 F. Slice potatoes into 1/4 inch rounds and add to a bowl. Toss with olive oil and seasonings and add to a parchment-lined baking sheet.

Bake for 35-40 minutes, flipping halfway.

Cube salmon into bite size pieces and add to a bowl with the marinade ingredients. You can leave the salmon to marinate in the fridge while you prep the toppings.

When ready to cook, heat a large pan on medium heat with a tbsp of vegetable oil.

Sear the salmon on each side until browned (approx. 4-5 minutes) and remove.

For feta sauce, add ingredients to a blender until smooth. Add to a squeeze bottle.
Step 7
For the tzatziki, add Greek yogurt, grated garlic, finely chopped dill and the rest of the ingredients. Taste for any additional salt and mix to combine.
Step 8
For greek salad, finely chop vegetables and add the rest of the ingredients. Mix to combine.
Step 9
When ready to eat, add a bed of potatoes, top with salmon, salad, feta sauce an tzatziki and enjoy!
