Step 1

In a large pot or Dutch oven, add the bacon over medium-low heat. Once the fat has rendered, 5-7 minutes, increase heat to medium and add the paprika, cumin, cinnamon, and pepper. Cook 1-2 minutes to bloom the spices, then reduce heat to medium-low and add the onions and garlic.

Step 2

Cook until softened, 5-7 minutes. Add the sausage, potatoes, and a pinch of salt, cooking 3-4 minutes. Finally, add the oregano, bay leaf, tomatoes, and broth. Bring to a boil, then reduce heat and simmer for 35-45 minutes, until potatoes are fork tender.

Step 3

Fifteen minutes before serving, stir in the kale to wilt. Taste or salt, and, using the back of a fork, crush a few pieces of potato and mix back into the pot to thicken it. Serve warm with dill, Parmesan, lime, sour cream, and crunchy bread.
