Step 1
In a large pot or Dutch oven, add the bacon over medium-low heat. Once the fat has rendered, 5-7 minutes, increase heat to medium and add the paprika, cumin, cinnamon, and pepper. Cook 1-2 minutes to bloom the spices, then reduce heat to medium-low and add the onions and garlic.
