Step 1
Grease a 9x13 baking dish with cooking spray. Combine the grits, milk, vegetable stock and salt in a large saucepan. Cook over medium-high heat, stirring constantly, until thickened, about 15-20 minutes. Remove from the heat and stir in 2 tablespoons of butter and the cheddar cheese. Transfer the grits mixture to the prepared pan and spread evenly into the corners. Refrigerate until set, at least 2 hours, or overnight.
Step 2
Preheat the broiler on high. Grease and line a rimmed baking sheet with parchment paper and cooking spray. Cut the grits into 2-inch squares or use a cookie cutter to make rounds. Place grit cut-outs onto the prepared baking sheet, and brush with remaining butter. Broil until golden-brown and crispy, about 5-7 minutes.
Step 3
Meanwhile, heat a grill pan over medium-high heat and brush with oil. Pat the shrimp dry with paper towels. Combine the shrimp, olive oil and seasoning in a medium bowl and toss to coat. Thread the shrimp onto skewers and grill until pink and fully cooked, about 3-5 minutes per side. Remove the shrimp from skewers. Divide the shrimp evenly over the grit cakes. Garnish with green onions and serve.
