Make the special sauce:

Mix all special sauce ingredients together in a bowl and set aside.

Preheat cast-iron skillet on stovetop over medium-high to high heat.

While skillet is heating up, pack the ground beef lightly into loose balls, about 2½ ounces each.
Step 6
Take out the flour tortillas and smash ground beef into each, pressing evenly in the circle of the tortilla right to the edge. Season with ancho, garlic, salt and pepper right before you place into the skillet.
Step 7
Place flour tortilla into the skillet, a few at a time, so the beef is on the bottom. Let the beef cook until you see some rendered fat and the edges start to get a bit crispy.
Step 8
Once complete, flip over so the tortilla side is on the bottom. Quickly add a slice of American cheese to each taco and use a lid to melt the cheese (if available).
Step 9
Using a spatula, once the cheese is melted, place each taco on a plate and dress, starting with special sauce, followed by lettuce, onions then pickles. You can add another small dollop of sauce, if desired.
Step 10
Next, repeat the process and try not to eat them too fast.
