Step 1
Preheat oven to 220C/200C fan-forced. Place a greased baking tray in the oven to heat.
Step 2
Combine breadcrumbs, flour, spice mix and garlic salt in a large bowl. Whisk hot water and 1/2 cup sour cream in a medium bowl until smooth. Dip one chicken drumstick in sour cream mixture. Toss in breadcrumb mixture, pressing to coat. Place on a large plate. Repeat with remaining chicken drumsticks, sour cream mixture and breadcrumb mixture.
Step 3
Carefully remove hot tray from oven. Place chicken on tray. Spray chicken well with oil. Bake for 15 minutes. Turn chicken and spray again with oil. Reduce oven temperature to 180C/160C fan-forced. Bake a further 15 to 20 minutes or until chicken is cooked through.
Step 4
Meanwhile, cook potato in a large saucepan of boiling water for 15 minutes or until tender. Drain. Return to pan. Heat a small frying pan over high heat. Add bacon. Cook, stirring, for 3 to 4 minutes or until crisp. Add remaining sour cream to potato. Mash until smooth. Season with salt and pepper. Fold in creamed corn, 3/4 of the chives and 3/4 of the bacon. Sprinkle with remaining chives and bacon.
Step 5
Serve chicken with mashed potato, steamed peas and gravy.
