Step 1

Preheat oven to 350º F. Line a baking sheet with parchment paper

In a small bowl, mix together flour, baking soda, and salt.

In a separate medium bowl, whisk together egg, butter, brown sugar, and granulated sugar. Add the vanilla extract and continue mixing until well combined. Finally, add the flour mixture and fold until a uniform color.

Step 4

Slice and cube the Spam. Then in a small pan, pan fry the cubed Spam to give it a nice fry color on the outside.

Step 5

Set aside a small amount of cubed Spam to be used as a topping for the cookies. Fold the rest of the Spam into the cookie dough.

Step 6

Drop cookie dough balls onto the paper-lined baking pan. Then top with a few cubes of Spam per cookie

Step 7

Bake for 9 to 12 minutes until desired cookie consistency is achieved. Cool and serve!
