Step 1
Mix Dry Rub ingredients in a large mixing bowl. Rub mixture all over beef.

Select SAUTÉ, HIGH. Select START. Add olive oil to inner pot.

When the oil is hot, add and sauté onions for 2-3 minutes.
Step 4
Add sliced mushrooms and sauté for 2 more minutes.
Step 5
Add vinegar, orange zest, orange juice, brewed coffee, beef stock, and beef to the pot.

Press CANCEL. Secure lid for pressure cooking.
Step 7
Select PRESSURE COOK, HIGH for 50 minutes (00:50). Select START.
Step 8
Open lid and carefully take out the beef. Let it rest for 10 minutes, then slice.
Step 9
Place vegetables from the pot onto a plate, lay beef slices on top. Ladle some of the sauce over beef and vegetables.
