Step 1

Prepare the ingredients you need. The chicken gizzards you bought are not very clean. First remove the yellow residue inside the chicken gizzards, clean the sand and gravel thoroughly, soak in clean water for 3 hours, remember to change the water in between.

Step 2

All other spices must be prepared. Cut the green onion into small pieces, cut the old ginger into slices, and wash the dried chili, hawthorn slices, cinnamon bark, and bay leaves with water.

Step 3

Put an appropriate amount of water into the pot, add the shallots, ginger slices, cooking wine, and the soaked chicken gizzards, take them out and wash them, put them in the pot, and boil for 2 minutes after the water is boiled. After cooking, take it out and wash it with warm water. This will remove the smell of chicken gizzards by cooking it again.

Step 4

Add water to the pot again, the aniseed, bay leaves, cinnamon, dried chili, hawthorn slices, and the shiitake mushrooms. Cook for 2 minutes to get the flavor of the seasoning.

Step 5

Put the cleaned chicken gizzards into the pot and boil again. After the water is boiled, turn to low heat and cook for about 10 minutes. The taste of the chicken gizzards at this time is just right, not soft or hard. If you like a softer taste, or for children, you need to cook for a few more minutes to make the taste of the chicken gizzards softer and tenderer. Or use a wall-breaking machine or a food processor to make a puree before eating.

Step 6

After cooking, add the right amount of salt according to your own taste. You don't need to fish it out. You can pick it up as you eat it. Soaking in the original soup makes it easier to taste. If it’s summer, you can put the pot together and put it in the refrigerator. The iced chicken gizzards will taste and taste better.

Step 7

Cut the chicken gizzards into slices, clean the chives and coriander, cut into small pieces and sprinkle on the chicken gizzards, mix the light soy sauce, rice vinegar, sesame oil, and chili oil into a bowl of juice, stir well and pour on the chicken gizzards. When eating Just mix well.
