Step 1
Pre-heat oven or Air Fryer to 450F
Step 2
Mix the rice flour, corn starch and all purpose flour in a bowl.
Step 3
Add salt, pepper, smoked paprika, and optional garam masala and mix it nicely in the flour mixture
Step 4
Take individual chicken wings and toss them in the flour mixture
Step 5
Gently tap off the excess and lay it on a wire rack
Step 6
Once all of the chicken wings have been coated with the flour, place the wire rack in the oven or air fryer and bake them at 450F for about 45-50 minutes
Step 7
Half way through the 45 mins, you can take the chicken wings, quickly spary some PAM and turn them over and pop them back into the oven for another 20-25 mintues till they are nice golden brown and crispy
Step 8
For the glaze/sauce, heat 1 tsp of oil in a sauce pan, Add the minced garlic and ginger and saute it for 3-4 minutes.
Step 9
Add the tamarind paste, gochujang paste, honey/maple syrup and sugar, salt and pepper in the sauce pan and simmer it for 4-5 minutes on a medium flame
Step 10
If the sauce is too thick, add in some vegetable or chicken stock 1 table spoon at a time, so that it has a thick sauce like consistency but not too runy. We need a nice consistency so it can nicely coat the wings.
Step 11
Once the wings have been cooked and look nice golden brown and crispy, place them in a bowl. Add a few table spoons of the glaze/sauce at a time and gently toss them so the sauce coats the wings nicely. You can add more sauce depending on how you like it,
Step 12
Sprinkle the coated wings with some sesame seeds and scallions and serve them piping hot.
