Step 1
Method. In a large bowl, combine all the ingredients thoroughly. You can store this rub in an airtight container indefinitely.
Step 2
Preheat smoker to 120ºC for Baby Back Ribs or 135ºC for Spare Ribs.
Step 3
Trim additional loose skin or meat off pork baby back ribs.
Step 4
Season the ribs with a heavy coating of the rib rub on both sides of ribs. It’s best to let the ribs stand at room temperature for 30 minutes to allow rub to work it’s way into meat.
Step 5
Place the seasoned ribs bone side down on grill, or put into foil pan on grate to keep smoker clean.
Step 6
Place on smoker; cook for about 2 hours.
Step 7
Baste the ribs with your preferred barbecue sauce and let cook for another 5 minutes. Don't burn the sauce!.
Step 8
Flip the ribs, with the rib side facing down, then baste with barbecue sauce; cook for about 5 minutes to caramelize the sauce; then remove from grill and serve. Credit to Smokin’ with Myron Mixon
