Step 1
Cut a slit into the pork chops to almost cut them in half but be super careful that you don't go all the way the back of the chop.
Step 2
Divide the sun dried tomatoes between the chops. On top of those add spinach and top that with 2 tablespoons of cheese for each chop.
Step 3
Put 4-5 toothpicks through the top layer of meat and down into the bottom layer to hold in all of the filling.
Step 4
Preheat the air fryer to 330°F.
Step 5
Using a basting brush, spread half of the olive oil on the top of each pork chop. Sprinkle on half the salt and pepper. Then add half the Italian seasoning.
Step 6
Place pork chops into the air fryer, oiled side down. Oil the other side of the pork chop. And add the rest of the salt, pepper, and Italian seasoning.
Step 7
Cook in the air fryer for 18-25 minutes. Flip over after 12 minutes and continue cooking for another 6 minutes. Check the temperature of the center of the pork chop with a digital thermometer. It should read 145°F to be safe to eat. If it's not up to that temperature continue cooking.
Step 8
Let rest for about 3-5 minutes before enjoying.
