Step 1
In a soup pot, sauté vegetables in olive oil for 5 minutes or until vegetables are soft, adding garlic towards the end.
Step 2
Add broth, coriander, marjoram, and thyme and bring to a boil.
Step 3
Reduce heat, cover, and simmer for 1 hour.
Step 4
Add milk, salt, pepper and simmer a few more minutes.
Step 5
For a creamy soup, puree in a blender before adding milk, salt and pepper, and then briefly warm again in a soup pot.
Step 6
Dress up with fresh parsley and cilantro either for the blending or after.
Step 7
For an extra warming effect on a cold day, add freshly grated ginger.
