Step 1
Set Instant Pot to Saute and add oil. Once hot, sear pork pieces on all sides, about 1-2min per side. Remove the pork, pour in mandarin juice and teriyaki sauce, then use a wooden spoon to scrape up the bottom of the insert.
Step 2
Return pork to the pot and close lid. Set to Manual and cook on High pressure for 40 minutes. Let pressure naturally release for 10 minutes before releasing remaining pressure.
Step 3
Toss together all ingredients for salsa together and set aside.
Step 4
Remove pork from insert and shred on a cutting board using two forks.
Step 5
To assemble bowls, add rice, then top with pork and mandarin salsa. Add avocado, sliced green onion, and shredded purple cabbage as desired.
