Step 1
Make the syrup. In a saucepan, combine sugar, sumac and water. Bring to a boil, stirring to dissolve sugar. Remove from heat and strain through a fine mesh strainer. Refrigerate until cold. Syrup keeps in refrigerator up to 10 days.
Step 2
In a shaker, press parsley with a pestle or wooden spoon to release its oils.
Step 3
Make the cocktail: Mix all ingredients in a shaker with ice and strain.
