Step 1
Preheat the oven to 160C. Line a 2-pound loaf tin with greaseproof paper.

Place the buckwheat flour, Demerara sugar, baking powder, baking soda, ground cinnamon, bananas, egg, Greek style yogurt, vegetable oil, honey or maple syrup and vanilla extract in the mixing bowl. Mix 30 Sec. / Speed 5.
Step 3
If you don't have a Thermomix, place the buckwheat flour, Demerara sugar, baking powder, baking soda, ground cinnamon, bananas, egg, Greek style yogurt, vegetable oil, honey or maple syrup and vanilla extract in a blender and blend until smooth.
Step 4
Pour into the prepared tin and bake in the oven for 1 hour and 10 minutes. Insert a skewer and test if it comes out clean. If not, bake for a little longer. You can put some foil on top to cover if it gets too dark.
Step 5
Once baked, remove from the oven and decorate with the banana halves. brush over some maple syrup and leave to cool entirely on a wire rack. Enjoy!
