Drain and press your tofu block for 10 minutes

Meanwhile prepare you sauce ingredients as instructed above

Now chop your tofu into large chunks and add to a large pan with a tbsp olive oil and fry until crispy on each side

Now to the pan add your onion, garlic, olives, capers, oregano, chilli flakes and fry for a few minutes until the onion softens

Meanwhile place your pasta on to boil as per packet instructions

Gently pour in your passata and lemon juice into the tofu pan. Stir and simmer for 10 minutes until it starts to thicken

Finally add your drained pasta directly into the sauce, along with a handful of fresh parsley and stir until combined
