Step 1
Preheat your smoker to 175° (or as close as you can get to it.)
Step 2
Place the Italian sausage links on the grill, and let smoke for about 30 minutes. Remove from the grill and let cool for a few minutes.
Step 3
Remove the casing from the sausage and add to a large stock pot. Brown over medium-high heat and break the sausage up into pieces. Add in the garlic during the last minute or so of cooking.
Step 4
Add in the diced tomatoes, chicken broth, tomato sauce, Italian seasoning blend, red pepper flakes, and spinach.
Step 5
Simmer the soup for about 15 minutes over medium to medium-low heat.
Step 6
Add in the cheese tortellini and let cook for 2-3 minutes, or until al dente.
Step 7
Remove from heat and stir in the heavy whipping cream.
Step 8
Serve hot, and topped with grated fresh parmesan.
