Step 1
Mix the vegan beef broth, soy milk, baking powder and ice cubes in a bowl.
Step 2
Dunk a handful of fries and get them all nice and covered in the beefy milk mixture for about 10 - 15 seconds. Remove and let them rest on a wire rack. Repeat with rest of the fries.
Step 3
Once all fries have been dunked, add the wire rack to a freezer.
Step 4
In a large pot or dutch oven, heat up enough oil to cover the fries. Use a neutral tasting, high smoke point oil such as Peanut, Vegetable or Canola.
Step 5
Once oil is heated to 375 F, add the fries to the pot carefully. They WILL splatter at first but it should only last a few seconds. The oil temp will drop to 350 or so, which is good. That's where we want it.
Step 6
Fry the fries in batches (don't crowd the pot) until they are golden browned. This shouldn't take too long, maybe 2 - 3 minutes max. Don't let them get too browned / burnt.
Step 7
Remove fries from oil and let them rest on a wire rack and salt to taste immediately. Enjoy while they are fresh!
