Step 1

Preheat the waffle iron.

Lightly combine butter and sugar in a large bowl. Mix them gently until they’re fluffy, light, and airy. This should take approximately 5 to 7 minutes.

Mix in the eggs and vanilla.

Using a separate bowl and whisk, mix the flour, baking powder, and salt. Then, slowly and gently combine this mixture with the creamed mixture in a large bowl. The resultant mixture will be thick.

Step 5

Spray the waffle iron with non-stick cooking spray, and add spoonfuls of dough onto it. Leave between three and four inches between each ball of dough. Bake the cookies for approximately 2 to 3 minutes until they reach a dark brown.

Step 6

Transfer the cookies to wire racks. Allow them to thoroughly cool before sprinkling them with the confectioner’s sugar. Enjoy!
