Step 1

In a bowl, mix soy sauce, vegetarian oyster sauce, Worcestershire sauce, sugar, and ketchup. Mix until sugar has melted

Step 2

In a pan, add drizzle in oil and turn the heat up to medium-high. Once the pan is hot, add in sliced onion, carrots, and shiitake mushrooms. Saute for 2-3mintues

Step 3

Next, add in sliced cabbage and green onion and saute for another 1-2 minutes.

Step 4

Make a hole in the middle of the pan and add in soba noodles (refer to notes), pour in ½ of the mixed sauce and black pepper, and saute together for 1-2 minutes. Once mixed well, pour in the rest of the sauce and saute together for another 2 minutes on high heat. Garnish with pickled ginger, and enjoy!
