Preparation -Preheat oven to 350-In large skillet cook the onion in olive oil until translucent.-Add butter and zucchini. Cook on medium heat until lightly browned. s&p to taste.-In medium bowl beat eggs, add Parmesan & parsley. Pour in pan. Cook on medium until bottom is set.Transfer pan to oven. Bake 15-20 minutes until top is golden brown.Serve hot or at room temp.
