Zucchini Pasta

linguine

zucchini

olive oil

garlic cloves, thinly sliced

fat-free plain yogurt

cheddar cheese

salt

pepper

Cook linguine according to package directions. In a sieve or colander, drain the zucchini, squeezing to remove excess liquid. Pat dry.

In a large nonstick skillet, saute zucchini in oil, 2 minutes. Add garlic; cook and stir until zucchini is tender, 1-2 minutes longer. Transfer to a large bowl. Add yogurt, cheese, salt and pepper. Drain linguine; add to zucchini mixture and toss to coat.

I was looking for ways to use up my zucchini & decided to give this a try.  Glad I did as it was very good.  Even my teenage son who insists he doesn't like zucchini polished off a big helping of it!  I substituted sour cream because I didn't have any plain yogurt on hand.

This dish was very blah, lacking in flavor.  I won't be making it again.

A new favorite! I used garlic oil, added more fresh garlic. I didn't have yogurt so I used sour cream. My husband says "make it again!"

My husband and I give this a 4 because after reading the reviews we spiced it up by doubling the garlic, adding penzey's pasta sprinkle and sicilian salad seasoning. We also tossed in fresh basil and oregano at the end. We also used whole wheat linguine and plain greek yogurt to add to the creaminess which did help!

A great recipe, but because I do not use salt due to severe high BP, it was a bit bland. So I added a dash of chili pepper, oregano, rosemary, thyme and paprika to give it a Mediterranean flair. Will definitely make again using my own mix of seasonings.

Add some cream cheese with the plain yogurt, and some dried oregano with the garlic.  I also added shredded carrots to the zucchini to add more veggies. Yummy.

This was so easy to make. I tweaked the recipe a little with fresh chives, dill and parsley and added some left over chopped chicken breast to make it a complete meal for our family. No leftovers from this recipe!

Very good and easy!  To the person who thought it was bland:  I substituted sharp cheddar cheese for the low fat and it was excellent! Will definitely make again!

Zucchini pasta is a good, delicious recipe that is easy to make and simple for all of us.  I won't add the zucchini, as one of my children is deathly allergic to it, but the rest of it is just plain delicious.  It's a keeper and going in my recipe box.

Delicious,I substituted Whole wheat cork screw noodles and fat free sour cream for yogurt and used fresh grated parmesan cheese instead of cheddar. Very good- I enjoyed my lunch today-

This was a quick and easy dish to prepare. I also thought it was healthy and a new great way to use zucchini, I will be making it again

this was so easy to make and used some of my harvest.  the taste was fresh and clean and the yogurt added just the right amount of creamyness

This turned out better than I thought it would! For an extra special twist - use a vegetable curler on the zucchini - almost looks like wide pasta noodles!

Totally an awesome dish. Great to use my fresh zucchini f or a light dinner. Will be making this frequently. Very easy  and quick to put together.

This dish has been a favorite for several years. in order to reduce the fat, we use Kraft No Fat shredded cheddar cheese. We also sauteed an onion and added it. Topped with dried chives for pretty presentation.  This is a yummy meatless alternative! !

Very few zucchini recipes out there worth trying, but this is a keeper. Picky family that normally avoids zucchini (which I grow by the truckload) gobbled it right up in this form.. A+ from me!!

This was good, It wasn't quite creamy and the flavors needed a little oomph. I added shredded carrots and chopped chives. It's a great light meal.

A little bland, but not bad. Good way to get some extra veggies into the meal.

I have tried this and it is so good especially topped off with chopped fresh parsley and grated provolone

I minced the garlic to bring out more flavor.  My kids loved it.
